Strawberry Chia Compote On Sourdough Toast


Low FODMAP Strawberry Compote on Toast

Basically posh jam on toast! I love this hot, but it actually works beautifully cold, spread on toast. In fact it's even better on hot porridge with a dollop of coconut yogurt!

[Prep Time: 3 mins. Cook Time: 5 mins. Total Time = 8 mins + Soaking the ground chia seeds] Serves One

INGREDIENTS

2 heaped tbsp of ground chia seeds soaked in water

A generous handful of strawberries 1/2 tsp vanilla extract 1-3 tsp maple syrup 2 slices of sourdough bread, toasted

INSTRUCTIONS

  1. The night before, combine the ground* chia seeds with water until they won't absorb anymore. Leave for at least 20 minutes or preferably overnight. *I just do this in a small blender.

  2. Finely chop the strawberries.

  3. Heat the strawberries in a sauce pan, adding a little water to stop it sticking.

  4. As it heats up, stir to help break down the berries.

  5. Once “stewed” add the soaked ground chia seed goo and stir through.

  6. Then add maple syrup and vanilla extra to your preference.

  7. Pour on toast or porridge and enjoy.
